Ingredients
2½ cups old-fashioned rolled oats
1 cup mixed dried fruit (raisins, pears, chopped apricots, or prunes)
¼ cup pumpkin seeds
⅓ cup honey
⅓ cup brown sugar
⅓ cup coconut oil (or butter)
1 teaspoon vanilla extract
¼ teaspoon salt
½ teaspoon cinnamon
Directions
Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
Toast the oats and pumpkin seeds
Spread oats on a baking sheet
Toast in oven for 8-10 minutes, stirring halfway through
Let cool for 5 minutes
Make the binding mixture:
In a small saucepan, combine honey, brown sugar, and coconut oil
Heat over medium heat, stirring until mixture begins to bubble
Remove from heat and stir in vanilla, salt, and cinnamon
Combine and bake:
In a large bowl, mix toasted oats, seeds, and dried fruit
Pour warm honey mixture over dry ingredients
Stir until everything is well coated
Press mixture firmly into prepared pan
Bake for 20-25 minutes until golden brown at edges
Cool and cut:
Let cool completely in pan (about 2 hours)
Cut into 16 bars
Store in airtight container between layers of parchment paper

Tips
Press mixture very firmly into pan for bars that hold together well
Let cool completely before cutting to prevent crumbling
