Ingredients

  • 2½ cups old-fashioned rolled oats
  • 1 cup mixed dried fruit (raisins, pears, chopped apricots, or prunes)
  • ¼ cup pumpkin seeds
  • ⅓ cup honey
  • ⅓ cup brown sugar
  • ⅓ cup coconut oil (or butter)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Directions

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
  2. Toast the oats and pumpkin seeds
    • Spread oats on a baking sheet
    • Toast in oven for 8-10 minutes, stirring halfway through
    • Let cool for 5 minutes
  3. Make the binding mixture:
    • In a small saucepan, combine honey, brown sugar, and coconut oil
    • Heat over medium heat, stirring until mixture begins to bubble
    • Remove from heat and stir in vanilla, salt, and cinnamon
  4. Combine and bake:
    • In a large bowl, mix toasted oats, seeds, and dried fruit
    • Pour warm honey mixture over dry ingredients
    • Stir until everything is well coated
    • Press mixture firmly into prepared pan
    • Bake for 20-25 minutes until golden brown at edges
  5. Cool and cut:
    • Let cool completely in pan (about 2 hours)
    • Cut into 16 bars
    • Store in airtight container between layers of parchment paper

Tips
  • Press mixture very firmly into pan for bars that hold together well
  • Let cool completely before cutting to prevent crumbling
  • For softer bars, reduce baking time by 2-3 minutes
  • For crunchier bars, increase baking time by 2-3 minutes
