Crispy Brussel Sprouts with Prunes

Not your ordinary veggie side dish!  This crispy Brussels sprouts with prunes dish is good enough to eat on its own but equally impressive to serve next to your favourite meat dish or weekend braai.

Ingredients

450g brussels sprouts, halved

4 slices bacon, cut into small pieces

1/2 cup diced onion

6 prunes, coarsely chopped

2 tbsp olive oil

1/2 tsp kosher salt

1/2 tsp black pepper

2 tbsp white wine vinegar

1 tbsp honey

Pine nuts (optional for garnish)

Directions

  1. Heat a pot of water to boiling, and add brussels sprouts. Cook for 6 minutes, until tender. Drain and run under cold water. Set aside.
  2. Heat a skillet to medium heat. Add bacon, and stir, cooking to release fat. As bacon starts to brown, add onion and prunes. Cook for 6-7 minutes until onion is softened. Remove from the pan.
  3. Heat olive oil in the same pan, add brussels sprouts, cut side down when hot. Sprinkle it with salt. Cook for 5 minutes on medium-high heat, then flip over.
  4. Add bacon prune mixture, and stir to combine. Cook for another 3 minutes, then stir in black pepper, white vinegar, and honey.
  5. Top with pine nuts and serve.
